A friend had a similar pan that I tried and liked. It was the commercial hardened pan....it was non stick. The one I bought I thought was non stick....it is not so I have an expensive pan that takes more care than my stainless steel ones.

I burned several things before I got used to using this pan. I have a gas stove-top and had to learn that I must use a lower heat than with my other pans. I do enjoy cooking with this pan and look forward to using in the years to come.

I was looking to replace my 10" skillet so when I ordered the same item number I was thinking I'd receive the exact skillet. Instead I received the omelette pan, same item number, but the top edge has a little curve rather than a straight edge. It works fine and the lid of the original pan fits but not exactly. Over all it will work for my type of cooking. It's not a disappointment, just different.

I have waited a long time to order this typically expensive commercial hard-anodized omelette pan during a half-price sale because I have owned a smaller Calphalon hard-anodized omelette pan for about 15 years. It was my favorite pan though too small to use for most things. I never had any issues with foods sticking in the previous omelette pan, but I am consistently having problems with eggs sticking in the newer pan. I have followed the NEW instructions to the letter. I cannot figure out if I am doing something wrong, or if the finish has changed somehow. It is good for browning and deglazing, but I have not been able to duplicate my normal fluffy egg results in this new pan.
