- - - less non-stick - yuk. Everyone has non-stick. I grant that Calphalon needs non-stick in its lineup but it's been difficult to find the Hard Anodized pan I was looking for (10") to compliment my 8" omelet pan which is at least 10 years old. Yes, HA requires more care, but if used correctly it can give years of non-stick service. This particular 10" pan should have a wide, flat steel handle like the older ones. Slide on a handle cover and it works great but on the 10" the handle is too narrow for pan control. Never-the-less, I'm glad to have it. Hope to get years of use out of it. Make more!
Is that even good English? Maybe not, but what can I say about how great it is to have seasoned anodized aluminum pans without the non-stick coating in the kitchen? Use and clean much like an iron skillet without some of the negatives (like rusting and weight). Love it. Keep a thin coat of oil on it and cleans like a breeze. Multi-purpose size that every kitchen should have.
You would be better off buying stainless cookware if you were interested in this pan. I wanted a pan for high heat in the oven and saw that it was broiler safe. I don't know how I got side tracked...

The best compromise between cast iron and non-stick. Has all of the cooking pluses of cast iron (except dietary iron) without the weight and maintenance issues.If treated property it cleans up easily and foods resist sticking like a well seasoned cast iron pan.
I almost gave this a 5 star review, but I'm hesitant about how it is going to hold up. It appears to be a great pan. I LOVE LOVE LOVE that it cleans SO easy!!! I just am concerned about how long it will go without scratches. I only use plastic or rubber on this pan, so I'm hoping it lasts a long time. I really do love it in every way so far!
I burned several things before I got used to using this pan. I have a gas stove-top and had to learn that I must use a lower heat than with my other pans. I do enjoy cooking with this pan and look forward to using in the years to come.
I was looking to replace my 10" skillet so when I ordered the same item number I was thinking I'd receive the exact skillet. Instead I received the omelette pan, same item number, but the top edge has a little curve rather than a straight edge. It works fine and the lid of the original pan fits but not exactly. Over all it will work for my type of cooking. It's not a disappointment, just different.
I have waited a long time to order this typically expensive commercial hard-anodized omelette pan during a half-price sale because I have owned a smaller Calphalon hard-anodized omelette pan for about 15 years. It was my favorite pan though too small to use for most things. I never had any issues with foods sticking in the previous omelette pan, but I am consistently having problems with eggs sticking in the newer pan. I have followed the NEW instructions to the letter. I cannot figure out if I am doing something wrong, or if the finish has changed somehow. It is good for browning and deglazing, but I have not been able to duplicate my normal fluffy egg results in this new pan.
I recieved this as a Christmas gift and read all the info provided. After following every step I attempted to make eggs and Sausage. The sausage stuck and the eggs stuck. I got online and tried to find out what I did wrong. I started an online chat with the company and she told me to add oil or butter to the pan before starting.Hello it's sausage.I can't begin to add extra fat to my meals just to use this pan. When cleaning it is not hard but the sides get this sticky film and makes it tacky, I had to go buy a special cleaner for it. I tried to return it and it was going to cost me as much as the pan .Iam stuck with it.To return it cost $30 in the same package. Caphalon let me down.
good pan, I can see using it along with my 50+ year old cast iron which is great. pretty much non stick if you cook the right things, not for everything but great for most. If you learn how to cook this will be a great pan for your pantry. wont wear out like non stick stuff that is temporary, think this will be a good long term staple. recommend it if you dont pay too much. non stick is occasionally useful but over-rated.
Yes, it is not a non-stick pan, but a very good saute or for other such uses. I do not have to worry about scraping the bottom of the pan or any of the coating coming off with the use of various utensils. It heats very evenly without hot spots so there is no tendency to burn any part of what is being cooked. Same temperature all around. Heats up fairly quickly and is of reasonable weight. A solid product.
I was concerned my omlettes or scrambled eggs might stick because this wasn't a non-stick pan....boy was I wrong! I sprayed a touch of cooking spray on it, JUST like a do my non-stick, and everything slides right out like a dream! I cook breakfast eggs on it every day and it's just as wonderful as the day I bought it. I don't put it in the dishwasher I just hand wash and dry it. Cleaning is so easy I've never had to use an sos pad or scratchy side of my sponge. I've read reviewers who say things stick, but I have to wonder if a little common sense wouldn't fix that by using a little cooking spray or oil considering it's not a non-stick. Non-stick pans will flake and they aren't forever non-stick anyway with regular use so I'd rather spend my money on something that will last AND is healthier. Further benefits I have with this versus non-stick are COMPLETELY EVEN COOKING throughout my food and PERFECT EGGS! It's a miraculous little pan and I am going to purchase more from this line. I can't say enough about it and I think this will last me many, many years. If your on the fence, try it. I promise the lasting quality of this pan is a bargain for twice price!
I really like the commercial hard anodized that do not have the non stick coating. My pan preference is the commercial hard anodized for fry pans and tri-ply for sauce pans and stock pots. I wish you had the everyday pan in the commercial hard anodized.
