Omelette pan
I prefer to cook my scrambled eggs or omelette on stainless for the browning. The edges of the pan are perfect for a small saute, as well.

I love the weight and balance of this pan. I have cooked omelets and pancakes and the heat distribution and interior finish produces phenomenal results. As always with stainless pans, folks should remember to pre-season the pan *(I use light grape-seed oil). The exterior finish is highly polished and is very easy to clean. Please don't ruin your pan by placing it in the dishwasher (hand wash only).

This conducts heat so well and so evenly that I may have to modify my usual cooking temperatures. It's great.
Scrambled eggs stuck
I've used this pan once and was somewhat disappointed. After following the heating instructions, and waiting for the butter to melt, I added scrambled eggs and cooked them over medium heat on a gas stove. The eggs stuck to the bottom of the pan, but cleaned up fairly easily after soaking for five minutes. Not non-stick with proper preheating as advertised. I've been cooking for 30+ years and know how to use stainless steel pans so this was a disappointment. I was going to buy several sets for my children, but not now.
