Knives in the Pro S series are made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. This 10-in. Hollow Edge Slicing Knife features a unique blade with scalloped indents that allow you to cut through meats with firm exteriors and delicate interiors, much like serrated knives, and still leave thin slices perfectly intact and juicy. Great for prime rib, too.
J.A. Henckels has been manufacturing fine cutlery since 1731. Made in Solingen, Germany, its knives are forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time.

Smoked a 17.87 lb. sirloin roast (the same size as a basic sized back pack) and it cut through her like Butter. One slice was as large as the plate . No issues here.

This knife is excellent. Razor sharp, long blade, classic styling and even fits in my knife block. I love it. If you need an extra long slicing knife, this is it. Look no further.

I bought this knife for cutting whole pickled salmon into thin slices. I have yet to make the salmon again, but have used the knife on several pieces of meat and poultry. It slices easily and does a much better job than my other slicing knife.
The longer length took some getting used to, but the ease of slicing through large roasts makes it worth learning to use properly.
Expensive disposable knife

The first time I used this knife, it cracked one third of the way through the blade one inch from the handle. I had just thin sliced some beef for french dips and it performed beautifully, then I tried to slice a piece of medium Cheddar, there was a noticeable sound when it broke. Cooking.com is supposed to be sending me another one, but so far it has not arrived. If I get another, I hope it is not defective like this one. I have normally bought Wusthoff Grand Prix in the past, which I have been very happy with. This is my first Henckels, and if this is the quality, I wont buy another, I just wish I had the money for the Shun's.
