I bought this knife for cutting whole pickled salmon into thin slices. I have yet to make the salmon again, but have used the knife on several pieces of meat and poultry. It slices easily and does a much better job than my other slicing knife.
The longer length took some getting used to, but the ease of slicing through large roasts makes it worth learning to use properly.
Expensive disposable knife
The first time I used this knife, it cracked one third of the way through the blade one inch from the handle. I had just thin sliced some beef for french dips and it performed beautifully, then I tried to slice a piece of medium Cheddar, there was a noticeable sound when it broke. Cooking.com is supposed to be sending me another one, but so far it has not arrived. If I get another, I hope it is not defective like this one. I have normally bought Wusthoff Grand Prix in the past, which I have been very happy with. This is my first Henckels, and if this is the quality, I wont buy another, I just wish I had the money for the Shun's.
