A great cast iron pan!

The key thing about owning this type of pan is the "seasoning" treatment. Detailed instructions are provided about how to season the pan and care for it after each use. While it may seem strange at first, the process makes sense and really seems to improve the quality of the pan. Its non-stick properties quickly increase, and you just get used to not using soap on it. I do think that people who don't like "high maintenance" stuff might not have the patience to care for this product and, so, might not get the best performance results.

It's also probably worth mentioning that the pan is fairly heavy.

Shipping

I was surprised at how much shipping cost. I bought it at a low price and the shipping was as much as the pan cost itself. I understand it's a heavy product, but I was disappointed at the price after shipping was added in. Another idea I had was pairing it with a hot pad that fits around the handle. As I've used it I've realized that this would make the deal that much better.

Solid choice

Be prepared for a heavy, well made pan. It's all you want in a skillet. Nice even cooking, great flavors and easy cleaning. You'll love it and it's a workout for your wrist at the same time.

this is a must in any kitchen and has many uses. Perfect for fried chicken and gravy. Great for a novice and someone who spends a lot of time in the kitchen like myself. Easy to take care of and will last forever, my daughter has her eye on it.

Great pan for glass top stove

Not all cast iron fry pans have a flat bottom to work well on glass top electric stove tops. This one does. Other evidence of thoughtful design are the comfortably shaped handle and the slightly elevated center that keeps excess oil from pooling in the center of the pan. The factory seasoning is a helpful start, but I found that additional seasoning (coat with oil and bake at 450+ for 30+ minutes) was needed. This pan should last forever. It won't need to be tossed out like my old warped bottom aluminum one, or my old enameled cast iron with chewed up non-stick Teflon lining. Seasoned cast iron is the best non-stick surface, because it is indefinably renewable. There is nothing about this pan that i would wish to be different.

Emeril cast iron fry pan (12")

I love my new Emeril cast iron fry pan (12"). I recently purchased a 10 1/2" Emeril cast iron fry pan at a department store and loved it so much but it was a little small. I've used my 12" fry pan to cook cornbread for my Thanksgiving dressing and it was wonderful. I've also made fried chicken. You can't beat a cast iron skillet, not even the non-stick cookware. The price was a great bargain/value, however the shipping was almost the same price as the fry pan itself. I love the Food Network website and television programs. Keep up the good work.

I grew up using cast iron skillets and absolutely love them but unfortunately this one is bigger than my electric stove burner and doesn't heat all the way to the side as I thought it would. That means the cooking is uneven and I was disappointed.

I have purchased other name brand cast iron skillets, and this one put them to shame! Unbelievably heavy duty, translating to better quality cooking... This is a great pan with a great price - I paid more for pans with inferior quality.

Not like Mom's

I have a 10 in. Wagner cast iron frying pan that belonged to my Mother and like it very much. Your Emerilware by All-Clad was quite a bit different than Mom's pan. The thing that really caught my eye was the roughness of the surface; inside and out? Is that why is was so inexpensive??
