This is difficult to use for a first time owner of this type of product. I went back to my electric sharpener even though they tell me it isn't the best for my knives.

I've always used stones to get an edge and then a steel to maintain it. This diamond steel is a fine grit and fast cutting. If you are carefull with the angle of the blade, it gives a fine edge with just a few passes. Following with a steel polishes the edge to excellent sharpness. Anyone good with using a steel will love it.

I am very happy with the sharpening steel. I did a lot of research and review reading before choosing this. I have several J A Henckels knives and am happy with them. I was able to save 3 knives that have never been sharp enough and were ready for a garage sell. They were Santoku knives and sharpened up perfectly. So far I haven't needed to sharpen the Henckels knives but I am sure it will work great.
