The chef's secret!
I purchased the 12 inch Stainlesss Steel Skillet by All-Clad to replace a non-stick skillet. I am very pleased with this copper core skillet, and plan to purchase one at a time until I have a set. I just purchased the 10 inch skillet. They cook so evenly and clean up is a breeze, because you never need to use high heat. Now I think that these pans have been a chef's secret all along. The 12 inch skillet is very large, and easily holds four to six chicken breasts or pork chops. The lid from my electric skillet will fit this pan. This pan has been used daily and looks like new. Just a note that metal utensils will scratch the inside of the pan, so I continue to use my non-stick utensils on the stainless steel pan. I have never paid so much money for a pan before, but because of the performance, classic look and ease of clean-up, they are well worth the price.

This is my go-to pan, since I decided to get away from PTFE non-stick and aluminum pans as much as possible. I also use cast iron, but of course there are many things that can't go in those pans. This pan heats quickly and very evenly, is easy to clean, and hasn't had any serious sticking issues, although you need to use the right amount of oil at the right time, get the right temperature, and not try to move the food at the wrong moment. Sometimes I don't get that combination quite right, but overall I love this pan. Metal utensils will scratch it.

We really like this pan and the level of quality. I also like that it has the extra handle which the cheaper one does not. Still wish it came with a lid though.
