Each year, I use America's Test Kitchen (ATK) recipe for cooking turkey and I combine that with sliced potatoes, carrots, celery and onions underneath. I adopted this from ATK's recipe for High Roast Chicken Dinner. The roasting pan I used to use was 3+ inches tall, steel with a painted coating that was coming off along with the paint or whatever it was coming off the V-rack. So I reviewed products and purchased this one. The pan is deeper than mine was, which allowed me to put more potatoes on in it. The V-rack had a coating that didn't stick to the bird. The pan was heavy and stainless steel for easy cleanup. The coolest thing about it was that after I let the turkey rest in the V-rack for about an hour, the V-rack was already cool. Sometimes the family will pick at the potatoes before the bird is carved. Before they would burn their hands...a good deterrent, but not very family friendly. Now with this V-rack, the kids and wife can pick at the potatoes and veggies underneath without burning their hands. The coating also seems very durable. I made my previous pan last me for 8 years. I hope this one lasts a lot longer. I'm fairly certain it will.
