The traditional heavy gauge steel/tin pan provides the appropriate browning for a true Madeleine. The silicone pans don't brown properly.

Madeleines rock

We ordered the second pan because the frirt one worked so well. The Madileivns came out perfect. We used a gourmet recipe that did not use any baking powder. It was great. We buttered and floured the pans between use and the Madileines were perfict and came out of the pans nicely. We were cautioned not to use non stick pans, however these worked very well and are non stick even though they are not coated with anything. Highly recommend.

The pan is not a non-stick finish, but you won't have any problems getting the madeleines out if you brush it with butter, freeze the pan for a few minutes, then brush with another coat. Works great!

Sturdy pan, giving the cookie a delicate golden color. Although not advertised as a non stick pan, the cookies were removed easily from the pan.

Almost Perfect!

Twice the Treat! Turned to FoodNetwork, and discovered this great quality mold at the lowest price of the several I found online, and it turns out magnificent Madeleines in a snap. Definitely worthy of your most painstaking recipe and absolutely the most mouth melting morsels you'll ever have. I would have given this five stars, but this pan is a touch lighter than I prefer. Other than that little "nit", it's perfect.

Why this is a better Madeleine Pan

I've tried other coated "non-stick" madeleine pans. The advantage these pans have is the heavy tin plating. The madeleines are more evenly browned using these pans, and less likely to burn on the bottom. (I bake mine at 375* for 13-15 minutes) The scallops are large and well shapped so one can make small or large madeleines from the same pan. If you read enough reviews of madeleine pans you will quickly learn there is no such thing as 'non-stick'. These pans are non stick, tin plating is a non stick surface, but I use bakers magic spray which works well. You could brush on melted butter, or non stick spray, and then flour the pans. This will usually result in the madeleines falling out ot the inverted pan with a firm tap on the bottom. Be sure to order enough of these pans so you can make a double or tripple recipes without having to wash pans in the middle of baking.

I didn't like this one very much because of how mcuh the madeleines stuck to the pan. No matter how much butter or oil I used to lubricate the edges, it stuck there and disfigured the cookies. Since the look of the cookies is one of your goals, I would recommend the non-stick version of this!

Improving product

I would like to see this product (madeleline pan) with a non-stick surface. I have to wash the pan after each batch. I love how the cookie-cakes come out, but it would be faster if I didn't have to butter the molds each time I used the pans.

The only thing I have to say is to advise people to not fill the Madeleine shapes more than half way. My directions said to fill the shapes, but they rise, and mine overflowed the pan and ran together. I did have enough time to take some out of each shape on the second pan, and that pan of Madeleines turned out great. Nothing even hinted of sticking with either pan; and I just buttered the pans, I didn't bother to flour them.

Pan works OK but does not brown

Bought this pan a few weeks back and had made 4 - 5 batches of madeleine cookies. The very first batch released like a charm. The second batch stuck like there's no tomorrow. The subsequent batches required a bit more buttering, but cookies were released fine. Overall, it worked OK. The cookies never attained the lightly browned color, even with varied cooking times and temperature. I think it's because of the light colored pan. Would not recommend.

I had ordered these pans; however, I was informed that they were on back order. I had to wait several weeks, but once they arrived and I used them, I was really pleased with the way they work. I just have to find a really good receipe that will take advantage of these pans.

I purchased two of these and they arrived very quickly. As some others have said, you must spray these pans each and every time with Baking Joy or something like that which has oil and flour mixed together and you will have no problems with the cookies turning out. I was a little surprised at the weight - I expected them to be a little heavier, but they are good products.
