I love my cookie sheets. These are the best you can get. The cookies bake evenly and don't brown too much as with nonstick pans. Also they are better than air bake because with the air bake pans the cookies loose moisture when cooking. these pans help the cookie to retain the moisture they are supposed to have.
I love them so much I bought them for my sister for Christmas.

Logo stamp interferes with baking

I was very disappointed when I received this product. While it meets the quality standards I expect from Chicago Metallic, they have begun stamping the company name in the middle of their professional, non coated bakeware. Cookies placed on the logo stamp stick unless one uses parchment.

I am extremely frustrated that I have to go to Williams Sonoma and pay more for the same pan made by Chicago Metallic for Williams Sonoma to get it without this logo. I prefer baking without parchment and find it very annoying to work around the logo on the cookie sheet.

It is also bothersome that this is not visible in the illustrations of the cookie sheet in the online catalog, and even more so that the logo was not stamped in the

How did I cook without it?

I have a small reputation as a cookie baker but it was a struggle. It seemed like only constant vigilance and split second timing got me the results I wanted. I saw an episode of America's Test Kitchen where this pan was tested and decided to see if it would take some of the stress out of baking. I found it was everything the reviewers said -- all of the my cookies are dependably browned and not overcooked without me having to hover over a hot stove like a mother hen.

Great addition to baking supplies

I have a similar cookie sheet from cooking.com that I bought a couple of years ago and really like. That's why I ordered this one. It's not the same, but just as good. The size is great because I can get more than the usual dozen on the sheet, but it's not too big for my small oven.
