Whether you're an aspiring baker, culinary student or self-proclaimed baking pro, creating perfect pastries requires an equally perfect cooling rack. As with all their cookware, accessories, and kitchen tools, the Certified Culinary Masters on faculty at the world-renowned Culinary Institute of America have designed this Culinary Institute of America 17-in. x 12-in. Masters Collection Cooling Rack to handle a variety of culinary jobs from large to small while helping to achieve consistent, high-quality results. The large 17-inch by 12-inch rack provides plenty of space to spread out a full batch of freshly baked cookies, a half sheet cake or a pie, allowing air to easily circulate around your goodies to speed up the cooling process. Quick, even cooling ensures your treats don't continue to cook on a hot pan and overbake as they rest, all but eliminating cookies with overly crispy edges and brown, burnt bottoms. This rack's medium-sized grid also helps encourage proper air flow and prevent condensation, all while providing a strong, supportive base for even the most fragile, wafer-thin delicacies. Once your dessert has reached room temperature, place the rack on an easy-to-clean surface and you have a base for decorating cookies, sugar-dusting your pies or frosting a layer cake -- the rack's grid keeps icing from pooling around the base of your goodies and creating an unsightly mess.
Best Used For:
Any baked good or cooked item that needs to sit on an elevated, uninsulated surface in order to cool. Also great for resting hot nonfood items (such as sheet pans or pie plates) away from easily damaged surfaces like tabletops.
Purchased because recommended by CI. Works super as a cooling rack but also as a cooking rack. Fits perfectly inside a half-sheet baking pan which I use almost daily. Most recipes I use call for this item and I had been using whatever rack I had purchased on sale locally. I now see that this allows me to use the entire half sheet and the grid it tight enough to stop items from falling through. It keeps meet out of the released fat drippings, cleans up easily, and also can be used as intended, to cool hot pans from the oven. LUV IT.
This cooling rack is of great quality. It is good for cooling baked goods, as well as draining foods such as fried chicken. The grid is small, so nothing falls through. It is easily cleaned by turning upside-down and soaking in a 4-sided baking sheet(half sheet size) filled with hot, soapy water.
I couldn't find a rack anywhere out there that would fit inside a sheet pan. I actually bought one elsewhere before realizing that it didnt' have cross grids. Since I was using it to cook things like veggies that could fall through the slats, I quickly returned it. The way the rack fits in the sheet pan was a big seller for me. The cross grids also are a plus. It's an excellent product that I would highly recommend!
This is very well made. Not being a baker, I will use it for cooking and warming meat and veggies. When I called the manufacturer the customer service rep strongly instructed not to use it in an oven over 350 f degrees. Oh, well.
This is perfect for cooling the large size sheet cakes. I only wish there were a larger size as well. I have another pan that is about 3 inches larger all around than this rack. But I am very happy with my purchase.
I bought these to replace a set of three straight-line (as opposed to grid) cooling racks. These are larger than my old racks, and the grid is far better for cookies (cookies used to slip through my old racks). The legs on these racks argue argue a bit with the baker's cooling rack that I bought to use with them, but they still work together. I bake cookies all year long and I should have bought these ages ago.
Bought several at another Surla*** store. They were
much heaver with longer feet for about the same price.
I would have gone back to that store, but much of there
products have become cheap and flimsy or worse yet...plastic.
This worked perfectly for what I wanted it for. Can cool things on it better/faster as air gets underneath, vs sitting on a solid surface. And it works great for dipping baked goods in glazes or drizzle gnache so it can drip onto pan below. I made vanilla bean scones 3 different times in first couple weeks I got this. Worked great cuz you dunk the whole scone in glaze and sets up nice- stays on bottom better.
