these are the most heavy duty cookie sheet i have found. i bought them based on the review from cooks illustrated. i don't always agree with their reviews but this one they were spot on.

I was getting before, here & there. This one doesn't bend/warp out of shape, it's heavy, it's large, it's easy to clean, and it doesn't leave all these stains behind.
Vollrath cookie sheet is thick, high-quality aluminum. It works well for baked goods which MUST have a very flat surface which will not warp -- for example, gingerbread for construction. I found it too thick for cookies which must set quickly -- such as chocolate chip. The cookies spread too thinly before baking is complete, and bottoms don't really brown. So, I will have to make adjustments before using it for such a cookie again. For meringues, macaroons, and such items it should be fine. It is a fine, heavy, sturdy baking sheet for the appropriate baked items.

The sheets are heavy and do not warp when heated. My cookies and breads do not get overly browned on the bottoms, which happened when I used nonstick sheets. I do line them with parchment paper . Because they are so heavy, the sheets take longer to cool down, so if you are baking large batches of cookies, you will need a minimum of three.

The heavy construction and overall quality produce perfect cookies with great texture and perfect browning every time. I was very pleased with this product both out of the box and out of the oven. If you think they just don't make things like they used to, try these. Vollrath proves quality is still attainable like it was back in the fifties and sixties when my mom was equipping her kitchen.

These cookie sheets are in a completly different catagory than cookie sheets you purchase from local retail stores. They are heavy and won't warp in the oven while heating - gone are the days when the cookie sheets make that horrible noise about 3 minutes into a batch of cookies. They cook evenly without the burnt bottoms. To use them, purchase parchment paper for an easy non-stick experience. The sheets of parchment easily slide off the cookie sheets for cooling. Cookies easily come off of parchment paper. I purchased three cookie sheets since you can cook multiple sheets of cookies at the same time with even cooking in a covection oven. This saves a great amount of time when cooking a batch of cookies. Cookie scoops are also a great tool for quickly filling up the three cookie sheets with even sized cookies. I still rotate the three sheets in the middle of baking for the most even results, and turn them around - the convection air flow is directional and one side browns slightly faster than others. They easily stack for a minimal amount of storage space. If you are looking for a high quality cookie sheet, this is the best available. If you have a convection oven, buy three!! Team them up with parchment paper and a cookie scoop and you will be baking like a professional.

I ordered another one so I could alternate pans in the oven when baking cookies. I even ordered 2 for my son who loves to bake cookies for his friends. It is firm, not warped, cooks very evenly & nicely with just the amt. of browning. So far, it hasn't corroded like so many aluminum pans I've had. I highly recommend this pan (2) if you like to bake cookies.

Yes | No Report Violation »My 25 year old cookie sheets needed to be retired so I checked out a few cooking sites for a recommendation and the Volrath seemed to be towards the top of them all. THEY WERE RIGHT! They bake SO evenly, they are nice and heavy and their large size leaves room for lots of cookies.
I love them!
Previously used air bake pans for cookies. Bottoms of the cookies still turned brown. The Vollrath pan heats evenly and cooks the cookie consistently. No more browned bottoms!
