This is rated as a commercial quality pan and it is. You can use metal utensils to stir or serve the contents; however, I still use non-metallic spatulas and spoons. The pan handle stays cool even when the contents being cooked are under heavy boil. When removing the lid the handle is mildly warm but I would be careful all the same and test it first or just use a towel or hot pad. The pan is heavy by itself so when full of water or pasta or rice it is much heavier. Keep this in mind and use two hands if you are not a strong person--my wife is not fond of the weight but like the quality of the pan. This pan cleans up well and quickly. Nothing seems to stick, even the gooiest cheese or carmelized/burnt bits. This is a must have pan for serious cooks. I have used the pan at least 20 times since I purchased it and it still looks like new.
