The Calphalon 2.5-qt. Hard-Anodized Shallow Saucepan is truly a workhorse. It's the perfect size for making sauces, steamed veggies, rice and other dinner favorites. The hard-anodized surface is really what makes this saucepan special. Durable enough to withstand the challenges and frequent use of professional kitchens, hard-anodized saucepans are 80 percent stronger than pans made from stainless steel. You can use this pan to stew, simmer, sear and glaze a number of different foods on the stovetop, and then pop the pan into the oven or under the broiler to complete the cooking process. This saucepan is also unreactive. Acidic dishes, such as tomato sauces and lemon-infused delicacies, will taste great because they won't pick up any metallic flavors from the pan. Thanks to the tempered-glass cover, you can easily peer into the saucepan to see how your dish is coming along, and the stay-cool handles allow you to move the saucepan easily around the kitchen -- even if it's full of food. This 2.5-quart size is perfect for side dishes when cooking for the family, or for cooking a main dish for one or two.   • Great Sauce Pan

    I'm not a professional chef, so I don't use this pan to make sauces. If I were, and made sauces "from scratch", I would be more likely to get a pan with sloping sides (Windsor Pan)for more efficient reducing of the excess liquid. However, for everyday generic use, such as boiling or simmering, this pan is ideal. Not too heavy, yet thick enough to ensure even heating on our gas cooktop, robust enough to withstand the occasional metal spoon for taste tests, and easy enough to clean. It is definitely not non-stick, but that's the point, isn't it? If you want to create a sauce, you should have little pieces of food "burnt" on to use as "natural flavor" for your sauce or soup. If you're afraid of food sticking, use a little butter - or use Teflon (R) coated cookware.

  • Replacement Pan

    I purchased this pan to replace one that I'd had for 30 years. This one is just the correct size and it is heavy and a good working pan. I have other Calphalon pans and like that brand and knew it was the type of cooking material I wanted. This pan is the size I reach for many times more often than my other pans. I am totally pleased with this purchase.

  • I am a amateur cook but was given a Calphalon 10" pan years ago. The pan slowly grew into my favorite stove top cooking instrument. I recently purchased the 2.5 qt shallow sauce pan. Great product!! Only downside is the requirement to hand wash the pan but this is well worth the price of admission considering how well the product performs in all other areas.

  • Difficult to pour, Leaves deposits

    This is a very good pot. It is strong, looks good, and you can adjust the lid to let the steam escape in the direction that you want. I have only used this pot for boiling water for coffee. It boils water evenly across its surface. It has never had any food items of any sort in it. It leaves deposits on my ceramic stove top each time I use it. I have used this pot about 20 times. The deposits are difficult to remove. I don't know what the deposits are since I believe I read that these pots are sealed. At any rate nothing but water has been used with these pots. Also, these pots are difficult to pour from. When I pour the water into my coffee press, it always spills on the countertop. Definately do not hold a coffee cup while pouring as you could burn yourself and make sure your pets are not near you when you pour.
