For canning your summer and fall fruits and vegetables, this 23-quart pressure canner and cooker is designed for easy, confident home canning, the only method recommended safe by the U.S.D.A. for low-acid food preparation. With its deluxe pressure gauge, it prepares food 3 to 10 times faster than ordinary methods. Comes with a special air vent/cover lock that allows pressure to build only when the cover is closed properly, and also prevents the cover from being opened until the pressure is safely reduced. Ideal for use on regular and smooth-top ranges. Holds 24 half-pint jars, 20 pints or 7 quarts. Extra strong and durable, it is warp-resistant and heavy-gauge for fast, even heating and a long life. I already owned the 16qt and loved it for pressure canning smoked fish that my husband catches in the Mississippi Gulf, but I needed one that could can my taller Weck jars. This one worked beautifully and now I really have an impressive looking pantry. I'm looking forward to making some of the recipes in the booklet too for just pressure cooking.

I bought this for a Christmas gift for my son, so it hasn't been used yet. Everything went according to plan and I recieved it in good time. I was disappointed in the inside box. It was pretty beat up. Since it's a gift I was wanting it to look good. I checked everything and it seems to be there so I'm hoping he will be pleased.

One of may first considerations in selecting this item was that it is made in the USA. My next consideration was that it could be used on a smoothtop range. While I have not yet used this pressure canner,I have, however, used products from this manufacturer in the past and have been completely satisfied with those purchases.

I have several sizes of pressure cookers and decided to add the 23 qt to my set. I use them frequently and because our garden is so large this year I will be using this one for canning. Can't wait to get started.
