Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

I never expected to pay this much for a paring knife! I never expected it to be worth every penny it cost. Stays sharp, easy to resharpen, feels great in the hand, and is not so long that it gets in the way of it's self.

The Wustdorf Paring Knife.

This is the best knife I have ever owned; I will never settle for second rate knives that are difficult to handle and take brute force to work with again! I have literally cut my meal prep time in half. (I got this paring knife on sale after a friend recommended the special offer Wustdorf offered online in November.) It feels good in the hand, has the perfect length blade, and sharpens like a dream. This knife cuts beautifully without squashing my fruits or mutilating my delicate tomatoesy. As long as Wustdorf keeps making new pieces more affordable to budget shoppers, I will continue to buy them--even if I have to do it one at a time!

Good value, great knife

I accidentally rated this piece before by putting the review in the wrong place (under the 3" paring knife). It's a very good value and a workhorse of a knife. I love the 3" knife for peeling, but it is not long enough to chop a large apple, for example, and that is where this one comes in. You could always use two different knives, but why bother for one or two apples? It's perfect for so many chores. It is comfortable and natural in the hand, well-balanced, and the blade is sharp and keeps a good edge. This knife is priced at least $14 higher in the local restaurant supply store here in central NY state. Shipping was free because I purchased it along with other items, totalling over $99. Money well-spent!

I really like it---sort of

This is a great little knife, especially since I've been needing to upgrade my existing paring knife ever since first acquiring it. I've been wondering how I'm going to sharpen it when it comes time, and it may be coming time already---seems as though I may wind up spending more to sharpen the knife than the knife itself cost. That is a disappointment.
