Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

This is a great little knife, especially since I've been needing to upgrade my existing paring knife ever since first acquiring it. I've been wondering how I'm going to sharpen it when it comes time, and it may be coming time already---seems as though I may wind up spending more to sharpen the knife than the knife itself cost. That is a disappointment.

This knife is sharp and sturdy and definitely worth having. In many instances when a really sharp knife is needed, however, 3.5 inches are just a but too short, so I would recommend the 4.5 inch version to anyone looking for a serious onion-cutting knife.

This is the best...

An excellent knife. I bought one for myself, used it for a couple of years, and then bought one for my daughter. It should last a lifetime. I'd suggest that anyone purchasing this knife also purchase a good sharpener.

I already have about three sets of Wustof knives. This
item was purchased as a Christmas gift for my daughter.
She called the first time she used it to say she never knew how easy potatoes were to cut, she has been using dull knives for several years. I will probably add to her set annually.

Wusthof are simply the best knives.

Fits easy in the hand and feels substantial when you use it. Much better than the old paring knife that came from K-Mart years ago. I peeled an apple with it right off - very sharp!

I am familiar with the Wusthof name and the paring knife lived up to my expectations. It is a quality instrument and, with care, fels like it will provide years of use. It feels solid to the touch, it is balanced, and is well made.

What can I say...I own a lot of Wusthof Knives and they are all excellent...I also sharpen Knives as a business so I'm impressed with the metalurgy and edgeholding ability of this line I sharpen them before I use them but most people would and will use them right out of the package. Price may seem higher but you get what you pay for.

Good value, great knife

I accidentally rated this piece before by putting the review in the wrong place (under the 3" paring knife). It's a very good value and a workhorse of a knife. I love the 3" knife for peeling, but it is not long enough to chop a large apple, for example, and that is where this one comes in. You could always use two different knives, but why bother for one or two apples? It's perfect for so many chores. It is comfortable and natural in the hand, well-balanced, and the blade is sharp and keeps a good edge. This knife is priced at least $14 higher in the local restaurant supply store here in central NY state. Shipping was free because I purchased it along with other items, totalling over $99. Money well-spent!
