Many people are choosing to avoid gluten these days, whether it’s because of allergies, celiac disease, or just wanting to lighten up their diet. The trouble is, most gluten-free baked goods and pastas just don’t measure up to their original gluten-filled versions. For bakers and cooks, going gluten-free has usually meant sacrificing flavor and texture in their creations -- until now.

Cup4Cup is a revolutionary gluten-free, multipurpose flour blend that replaces all-purpose flour. Developed by award-winning chef Thomas Keller and culinary researcher Lena Kwak, this miraculous flour blend has been in use at all Thomas Keller kitchens -- including his legendary restaurants The French Laundry and Per Se -- and has been delighting bakers and diners alike with its taste, texture and performance.

From tender cupcakes to crispy cookies, from chewy, crusty bread to delicate, flaky pie crust, Cup4Cup ensures that your baked goods will deliver the satisfying texture and classic flavor you’d expect from traditional flour. It also excels in savory items like pasta and pizza dough, and it makes a fantastically crispy coating for fried chicken. As the name implies, Cup4Cup can be swapped literally cup-for-cup with all-purpose wheat flour in any recipe that traditionally calls for it. With a neutral flavor and a smooth, non-gritty texture, Cup4Cup is indistinguishable from regular flour no matter how you’re using it.

Why We Love It:
For those of us who have chosen to go gluten-free, Cup4Cup is almost too good to be true! Treats we thought we’d never get to enjoy again are back in our lives, and taste better than ever.

Features:
  • 100 percent gluten-free

  • Peanut, tree nut and soy free
  • Made in the U.S.A.
  • Main Ingredients: Cornstarch, White Rice Flour, Brown Rice Flour, Milk Powder (*rBST-Free), Tapioca Flour, Potato Starch, Xanthan Gum

  • How does Cup 4 Cup compare with flour

I used Cup 4 Cup in 2 recipes and the resulting cookies were tasty as judged by several people who are not gluten intolerant. I could tell a difference in the "feel" of the dough which I think was due to the use of cornstarch in the product. I have used several gluten free substitutes and this is the best so far. It is far superior in taste and ease of use to using the almond flour and other substitutes in a wheat free cookbook that I purchased.

    I recommend this product.

  • Has Lactose

I guess I made a huge assumption that flour would not have a milk product in it, but luckily I read the package before I made anything with this expensive flour. I cannot attest to whether or not it performs because I had to send it back. One of the ingredients is milk powder, and my son has more issues with lactose than gluten. Once I realized my mistake, I contacted cooking.com to find out if the milk powder was lactose-free or not. The responded about 36 hours later that they couldn't answer my question and gave me the contact information for Cup4Cup. I emailed them. It took Cup4Cup about 4 days to get back to me (but it was right before Christmas, so maybe that is not their normal response time). Unfortunately, they affirmed that this flour has lactose. So it went back. They did recommend their Brownie Mix, which is gluten and lactose free, but my son is not allowed to have sugar either. Good luck with this flour. I thought it was going to be an answer to a prayer.

  • all purpose mix

Tried making a bread with the flour it was easy just follow instructions. I had never made bread like this and when it said to check after 5 minutes and add more water or flour a tablespoon at a time I didn't add enough flour and it was too soft a dough and the center. I considered that my practice and I'll do better next time.

    I recommend this product.
