The Shun Classic Perfect Paring Knife is, quite simply, the most versatile paring knife ever devised. It is light and nimble for in-hand tasks, but its deep blade is equally at home when used on the cutting board. The inward curve at the back of the blade makes quick work of peeling tasks, while the outward curve at the tip is ideal for precision slicing and coring. The Shun Classic Perfect Paring Knife is indeed perfect in so many ways for so many different jobs. Famous for their edge retention and sharpening ease, each Shun Classic Knife has an inner core of VG-10 "super-steel" which makes for an exceptionally sharp and smooth blade. Then each blade is clad with 16 layers of stainless Damascus on each side. The resulting pattern is called suminigashi or "ink pattern" after a traditional Japanese paper-decorating technique. While the patterned layers enhance the knife's beautify, they also add durability and stain resistance, and reduce friction when cutting. Moisture-resistant D-shaped Pakkawood handles provide comfort and control. The high HRC of 61(Rockwell hardness scale) of the steel provides a durable blade that retains its edge with minimal maintenance. A beautiful damascus finish evolves as you use the knife, adding beauty to your kitchen through out the years.VG-10 hardened Japanese steel cutting core, clad with 16 layers of SUS410/SUS431 pattern Damascus stainless steel on each side, for a total of 33 layers of metal.
