To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

Like all Globals, it is well made, feels good in the hand, and is, of course, incredibly sharp. The only drawback to me is its similarity in size and function to the 5 1/4 inch Global Santoku design which I already own. Therefore, I don't use it as often as I would otherwise. If you have neither, it is a great first choice and quite a value for the price. You can't go wrong with either Global or buying from the Food Network with its rapid response and speedy deliveries.

I didn't think a knife would make that much of a difference. These Global knives are great! I really could not believe how well they worked compared to the knives I had been using

This is a great knife to complement your chef's knife. I use it now for chopping most things, expecially if you don;t have a whole lot to chop.
