"In 2007 I met the designers of Ergo Chef at a gourmet show. I used the cutlery on stage during my demo and was given a set to take home. After a year of wear and tear in my kitchen - trust me it can be a knife gauntlet - I was hooked on the quality and design of Ergo Chef’s product. Before I knew it, I was teaming up with them to develop my own collection. We sketched a range of designs lookin’ for the select few that really rocked technically and aesthetically!
I’m a Hot Rod guy who knows that in order to do car-building right, you need high quality performance parts. The same idea applies to cooking, so the right knives are key. This 5.5-in. Hollow Ground Santoku Knife is perfect for rocking and chopping fruits and vegetables. It has a special crisscross knurl on the end to pulverize garlic, nuts, etc. Guy's Knuckle Sandwich logo is distressed and permanently etched on the blade. The black handle also boasts a flame-waved design, and the star is added to complete Guy's signature look.

The blades are precision heat-treated to keep a great edge.
Patented ergonomic design is created to be an extension of your hand for natural comfort.
Made of high-carbon German stainless steel for stain resistance.
Full tang and abbreviated bolster adds strength and balance.

Definitely a great value. it feels great. great balance and weight. handle feels very smooth and not cheap at all. shape is ergonomic. only qualm is that I wish the blade was bigger. I'm used to a 7 inch Santoku so a little different getting used to it. but cuts great and theres a definite potential to be very effective and fast with this knife.

Received knife in mail. put into sink with other items. Didn't get a chance to wash immediately. When I did there was already rust spots on knife. Had it for about 4 hours! :( Don't think this is good quality!

Guy's knives are great. They're sharp right out of the box, hold an edge well, and can quickly be re-sharpened with a few stokes on a good steel. They are also comfortable when doing lots of chopping.

I am a home cook, and extremely picking when it comes to my knives. I hate a dull knife, I don't have big hands so I like smaller knives, so this knife was perfect for me. The handle is fantastic! I am loving it!

I cook for my family everday and love to use as many fresh products as possible so I need good knives. The only complaint I have about this knife is that it could have a 1/2 inch longer blade, but I retired my 8 inch long chefs knife for this so it will just take some getting used to. This knife is well balanced feels good in your hand- to tell the truth I was worried the handle was slanted the wrong way, but it's not. Nice and sharp too and with good care I'm sure we will be handing it down for generations
