Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The best cheese tray is balanced in its array of scents, tastes, and textures. If you have a creamy Brie, you'll want a spicy blue counterpoint and a tangy, nearly flaky chèvre to round out the board. Nice knife; overpriced

Perhaps I was expecting too much of this knife; based on the reviews I read before buying I thought soft cheeses would effortlessly fall away after slicing; not so. Hard cheesed come off easily, but that's to be expected. It's not significantly better than much cheaper knives and not worth the price. At least it's beautiful and fits nicely with my other Wusthofs.

Not overwhelming

This knife is OK for cutting cheese, but it still sticks to the knife and crumbles occasionally. It is a little better than a regular thin bladed knife.

Great knife!

A previous reviewer complained that it was too small, but I find it a perfect size. True, it's not as big as a chef's knife, but it's for cheese, and how big a wedge of cheese are you trying to slice?! I love the elevated handle... very practical, and the cheese really does come off more easily, although the softer cheeses of course are stickier. I love Wustof knives and this one definitely would be a good addition to your collection!

excellent cheese knife in general except for very soft cheeses like brie that stick. it's also the sharpest knife i own; it's my only Wusthof (others are Henckels Twin, Calphalon, and Farberware Millenium).

Cheese slicing maniac.

I was a little skeptical about this knife. But it's GREAT. You can cut the thiinnest pieces of cheese.. The secret is the cheese doesn't stick to the knife.

Worst Off Knife

The hard cheese sticks to the knife and it is not as sharp as the other Wusthof knives. It pains me to rate a Wusthof product this low but truth be told this knife just does not cut it - no pun intended.

One of the sticky situations we get ourselves into is cutting cheese - you know: the cheese sticks to the blade, it's hard to make a nice, thin cut, especially with hard cheeses. That's what this knife is all about - making it easy to slice cheese. The blade is square, not rounded as is a chef's or utility knife, has treatment on the blade edge to release the cheese rather than having it stick as you cut. For me, it was a present from my son, and I'm sure he was happy with my present.

It is a SMALL knife but it does it's job well. Now I just need to make the cutting board a little smaller. Wife is very happy with the product and at the end of the day thats all that matters.

Better Bohemian

This is by far the best cheese knife I have ever purchased and used! I loved it so much that I had to buy a second one for my sister and her husband. This knife will cut through soft cheese without making gummy slices! We have a lot of what we call "Bohemian" suppers with a variety of cheeses and meats, and this knife is a must for great slices!
