A pressure cooker is also a wonderful resource for canning and simmering stocks. The spring-type mechanism in a dial format can be moved from one setting to another without changing valves: high (15 psi) and low (8 psi). Unlike pressure cookers of from the past, you'll never experience noisy steam escaping or mushy food. Most important is that you can cook high-fiber, low-fat foods in record time while preserving essential vitamins and nutrients - and conserving energy, too! The 18/10 stainless surface won't interact with food. Other features include an aluminum-bonded diffuser base for even heat distribution, a triple-safety mechanism, pressure control valves plus two independent over-pressure release valves and a safety lock on the handle. Really fast way to cook! Have never had pressure cooker (mother wouldn't use one because she had seen the results of a pressure cooker 'accident' that one of her friend's had) and had never learned to use one. Husband remembers food his mother prepared in pressure cooker, and thought it was time we got one. As a result of my on-line research, we chose to purchase this product. WOW -- was I impressed! I made 'fried' chicken (total time: 1 hour from start -- taking the whole chicken out of the package and cutting it up -- to finish! The chicken was ready before our baked potatoes were!

Product performed to expectations. The only problem was trying to close the lid when cooker first purchased. After using cooker, washing, oiling and replacing seal, lid now closes much easier. Need to make sure the front of the cooker lid is firmly pushed down onto pot. Instructions were clear on how to use. Wished enclosed cookbook had a recipe for bread - otherwise recipes are excellent. Would have bought an extra seal if this option had been available - didn't think to do this until after purchased cooker.

I purchased this pot to make Risotto. It was amazing the very first time I put in the ingredients. Now we have Risotto once a week instead of special occassions only!
