In Solingen, Germany, each piece is hand-forged in 38 manufacturing steps by skilled craftsmen. The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact triple-riveted composition handles.

Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

I LOVE this knife. Use it almost every day. Am buying it for a couple of people for Christmas. It is my primary slicing, dicing, mincing tool. And I have an extensive set of Wusthof knives. I use most of them, but I use this one most frequently. Exceptional.

Hollow Edge Santoku Knife

I have about 12 Wusthof knifes and this one is my new favorite. It is easy to use, very sharp and you can cut meat in very thin strips. Did I say very sharp I mean VERY sharp. Great Knife.

Great Xmas Gift

My son is a professional cook and chose this knife as a gift he wanted for Xmas. There were a few much more expensive knives he really liked but knows in his business theft is a possibility and was very happy to compromise with a lower priced but still very high quality knife. He really likes the balance and the feel of the traditional style handle

My Favorite Knife

This is my favorite knife. I already have two of these and am going to buy another one since it is on sale today, as we usually fight over using these knives when we are all in the kitchen together working as a family, so the more the merrier, that is people and knives, I guess. Anyone who loves to make short order of chopping would love this knife and it feels great in your hand. Is that wierd?

Very Sharp - love it!

I finally got my Santoku knife and I love it. It's very sharp and cuts through vegetables, meat and whatever else without any effort. Since it is so sharp I'm sure to pay careful attention when slicing. It is now the first knife I reach for.

I have the 5" version but it just doesn't do the job for everything. This knife is perfect for larger items and it makes chopping a breeze.

Hollow Edge Santoku knife

I didn't get into the cooking game until four years ago, and I started out with a knife block set that seemed to be fine. But I did notice that cheese and tomatoes were difficult to slice unless the knife blade was extremely sharp, and that damn near meant sharpening my chef's knife after every use.

Then I got a Santoku knife.

What a difference! The little hollow edges are the key, in that food doesn't stick. What a breeze to slice through cheese and tomatoes now! Because the tip of the Santoku knife curves down it takes a little getting used to, as a chef's knife is curved up at the tip, but once I mastered that little difference everything went swimmingly. I can't recommend this knife enough----and the price was outstanding. I also highly recommend the Asian knife sharpener by Chef's Choice.

This knife is great. It slices tomatoes without squishing them - even ripe ones! It is so good, I went out and bought one for my brother for Christmas. And I bought a rockered one the same size (easier to chop repetitively) and a 5" version. If only I had one years ago...

This is a really sharp knife. So sharp that I wasn't used to the extra care you need when handling it for the first time; even a slight impact against your skin will puncture it! The handle is a little thinner than ideal so my grip was somewhat un-ergonomical; there are fuller handles out there that promote more control and less hand strain but this one works once you get used to it.

When I decided to extend my collection of knives, this was the first new one I purchased. I love it. It is easy to handle and is very versitle. I use it everyday and was definitely worth the money. I would recommend this knife to any serious cook.

Wusthof 7-inch Santoku Knife

This is the best all-purpose knife that I have ever used. I received this knife as a Christmas present in 2004. Since then, I have purchased this same knife as a gift for my sister, four of my brothers (and their wives), plus a couple of friends.

I use the knife daily. It's great for chopping onions, garlic, and celery, as well as any other type of vegetable that needs cutting up. I find that I don't use my food processor nearly as often as I did before due to the ease of use.

This knife is wonderfully balanced.

I think anyone that cooks will find this an irreplaceable tool.
