Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The blade and shape on this 6.5-in. Santoku Knife resemble the Japanese Cook's Knife. The Santoku Knife is a true joy to use. It is sharp enough to cut razor thin slices of tomato without breaking the slice into bits. Such little effort goes into chopping now. I am on the Southbeach Diet, so I need to chop lots of veggies and this knife fits the bill perfectly. I'm just wondering why I had not bought one sooner! What a snap to get food chopped quickly and get me out of the kitchen sooner!

Amazing knife

Be very careful with this one. It cuts any food with almost no pressure at all. I applied it to a bundle of asparagus and didn't even have to saw back and forth.
I did find that some foods still stick to the blade. Even so, it is better than any knife I have had and I seem to collect them.
