An update from Wusthof, their Grand Prix II line is now better than ever. This new line of cutlery features an improved ergonomic, contoured handle that is slimmer so it's more comfortable to hold. The pebble-grained surface is slip-free, an improved safety feature you'll really notice, especially when hands are wet or greasy. An improved full tang improves balance and heft as you cut, slice and dice. More precise manufacturing measures have been taken to improve the fit of the handle to the bolster to help extend the life of your knife. A new no-stain, high-carbon steel alloy blade has an improved edge that stays sharper, longer so there's less need for frequent honing.

Have used to do finish cleaning on filets, such as red lateral lines from Sheep Head & Redfish etc.....I think it is great & assume that it will hold an edge when used as I intended...I hide it from all else that may be in the kitchen that may cut everything from chicken bones to coconuts or may need a screwdriver..The leather case is a must for this unit because of the point...Be careful when removing knife from shipping carton as on mine the knife did slide & the point penetrated the factory package 1/8
