This 7-in Hollow Ground Santoku knife is in the shape of the traditional all purpose knife found in most Japanese kitchens. Global's version includes hollows on the edge of the blade to create air pockets between the blade and food, reducing surface tension. Fruits and vegetables, meat and fish are sliced effortlessly and with perfect precision.

This is one GREAT knife! It is light, balanced and holds its edge. The low weight and balance can not be praised too much. These properties makes handling the knife much easier and precise. I have used many high grade knives, including Henckels and Wusthofs, and they have served me very well through te years. However, the Global has just blown these away! Its balance and weight make this my (and my wife's) favorite knife.

Global Knives are expensive but well worth it. My husband & I have been building our collection over the years and this was our seventh knife purchased. It's very well balanced and extremely sharp.

We love the product. The knife is extremely sharp! The manufacturer should not have a thin plastic strap around the product as it is very difficult to remove the knife from it. Because of it, my husband cut himself and had to get stitches.

Also, it would be nice if the knife came with a protective shield for the blade if you don't intend to put it in a block.

Purchased as a gift for father. He loves the quality and workmanship of global. I have globals myself and they are excellent knives. Worth the money not to have to replace them down the road.

This is my left-handed husband's favorite knife - it's easy for him to hold, and the slices fall right off the knife, which makes it easy to chop things very quickly.

This is a beautiful knife. Everyone should have a santoku knife for cutting veggies and cheese. The hollow edget means nothing will stick to the blade too.

The last two Hollow Edge Santoku Knives I purchased were for gifts. I have one for myself and several other Global knives. They keep the best edge of any knife I have every had. I only wish they made one slightly longer.
