    Love this knife

    I love this knife. I have large hands and it fits me perfectly. I use it all the time. It has kept its edge so far, but I have been very good about rinsing it off after I use it. I have not bought a knife in ages because I have great knives already (Sabatier) but I had seen and heard about these with the scalloped edge or whatever it is called and thought I would try it.

    This knife is incredibly sharp! I just have to gently move it through vegetables and meats I want to cut. Does slicing and dicing very easily.

    I had been wanting a knife of this style for some time and when I saw this J. A. Henckels knife on this sight for a great price, I knew it was the time to buy. The knife is the quality I was expecting as I have several other knives by the same maker. The different blade shape takes a little to get used to but in short time you are working with it like a pro. I think the hollow edge feature has more to do with looks than keeping the stuff you are working on from sticking to the blade but perhaps it actually works better keeping some types of food off the blade than others. The 7" size fit nicely in between the two other kitchen knives that I use routinely. And, as one would expect, the knife came with a perfect cutting edge. I finally sent out my other 3 favorite knives for professional sharpening after using this knife for just a few days when I realized what a truly sharp blade cuts like. I had only been keeping their edge with a steel before each use for years. It's a great chop knife for now until I get a little more used to it. I hold it very forward of the grip with only 2/3 of my hand on the handle and my thumb and forefinger on the sides of the top of the actual blade. I think this helps with lifting the blade off of the cutting surface as the blade has a much flatter profile that the standard chefs knives I've gotten used to and use more of a rocking motion with. All of this means that I really like this knife and look for every opportunity to pull it out of the block and use it. I had to kick an extra 8" chefs knife out of the block to make room for it. If you are serious about your kitchen tools, you shouldn't be disappointed with this knife in any way.

    A great product

    I have tried this knife on everything from fresh bread to thinly sliced tomatoes to a tough piece of raw beef to hard boiled eggs and on and on. It goes through everything like a power saw. Virtually no effort is needed. If you want a very good all-purpose knife, this is it. 'Nuf sed!

    Best of the Best

    I had many choices and I chose the Santoku by Henckles and I'm glad I did.
    This Henckles Santoku knife is the best of the best.
    It's very comfortable to use because of the shape of both the blade and handle and it's perfectly balanced and weighted.
    And it's easy to wash and doesn't stain.

    I love my 4 Star knives

    I love all of my 4 star knives, but this is my least favorite. I have prepped professionaly for about 10 years, and I still prefer the normal chef's knife to this one. I guess it is the blade profile, but I always feel like I need to slow down with this guy because I might cut off a digit.

    Also, the hollow blade does not seem to help at all with vegetables sticking to the knife.

    All in all, it is still a henckles knife, holds a great edge and all, but in the end I really only use it when every other knife is dirty.

    Outstanding Knife

    I have many knives in my kitchen, some purchased as sets, others bought individually for a particular function. Unequivocally this is one of the best designed and constructed knives as well as being versatile. Clearly, given its size and structure it doesn't do everything. However it cuts vegetables effortlessly and quickly. It cuts through fish cleanly and through large pieces of meat without tearing the flesh. The sharp blade lets me mince delicate herbs quickly. And I love how comfortably it fits in my hand. There is plenty of room to wrap my fingers around the handle without rapping my knuckles when I'm cutting.

    My only dilemma: it's now my husband's go-to knife as well. Very soon I'll have to purchase a second Santuko so I don't have to hide this one.

    The knife is very sharp and cuts well. However, the hollow edge does not keep some foods - soft cheese, avocado, etc. - from sticking to the blade. I would recommend it to my friends.

    This a great,well-balanced knife that has multiple uses.
    It's a small cleaver,a mincer,a chopper,and a food collector/scraper all in one.
    In my opinion the best of the santuku knives.

    I have been a fan of Henckels cutlery for about 20 years. This santoku knife ranks as my favorite knife today! The weight of and size fit my hand well, and even with its length and wide blade is easy to wield.

    This knife is a joy. It's ballanced, just heavy enough, and shaped to make cutting easy. Though we bought it as a gift for our son-in-law, after he encouraged us to try it, we bought 2 more for ourselves and a sister.
    If you don't own a Santoku, and you love to cook, your missing a great basic tool. This Kenckels is the real thing, and you'll know it from the first moment you use it!
