Pro S series knives are made of high carbon stainless-steel that will not stain or pit. The metal used to construct the blades extends to the back of the handle to provide perfect balance. The bolster, the point that rests between your fingers and the blade, is smooth and comfortable, making these knives a pleasure to use when dicing, slicing and mincing. J.A. Henckels has been manufacturing fine cutlery in Solingen, Germany since 1731.

Knife is well balanced and holds an edge. I can fillet a fish, debone a chicken or slice meat with ease. The blade length is just right, making it easy for me to handle all these tasks.

This product was purchased as a gift for a family member who chose it for himself to replace a similar fillet knife he had worn out. He seemed very impressed when it arrived. Summertime fishing will permit its true trial.

Have had several different fillet knives in the past and NONE have compared to the Henckels fillet knive. It has the right flexibility. Very happy with the purchase.
