The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

My mom had a knife just like this growing up in Japan and I always wanted one like hers. I already had a set of 9 knives from Global that I loved so I decided to give this one a try. I love it!!! I use it almost everyday slicing and chopping all my vegetables. The blade is big so it's easy to control the vegetables that are being cut/sliced and of course, it's very sharp. Highly recommend it without reservation.

All around, this knife is the most versatile tool in my kitchen. It's lightweight, well balanced, and a clean cut. Perfect for smashing garlic or transporting cut veggies to the stove. I just gave it, and a Boos block, to a friend who is building his kitchen wares. Essential.

This knife is amazing. It chops garlic, etc., the best I have experienced and with great ease. A friend of mine who just visited me was using it and she raved about it. She, like me, is an avid cook and knows what good cutlery is. I would recommend this product to anyone without hesitation.

I was very pleased with my global vegetable knife. I have other name brand knives, but this one feels good in my hand (well balanced) and is very sharp.
