The chromium in the blade adds to its stain resistance, while components such as vanadium and molybdenum help the blade retain its sharp edge over time. Because it is made of a single smooth piece of metal, this knife doesn't have any divots or crevices where food can get trapped, and the long taper stays sharper for longer than a traditional beveled blade would. At 8 inches long, the blade is ideal for cutting large vegetables and meat, or you can use it for chopping herbs, dicing onions, or other common kitchen tasks. You'll love the superior balance of this knife, which is achieved through a unique hollow-handle design that is filled with sand, and the sand shifts as you maneuver the knife to adapt the balance to the position of your hand.     Did a lot of comparative shopping before I made this purchase. I looked at some reviews, and decided to take the risk. I cannot even convey how pleased I am with this knife. It's lightweight, but well balanced, and cuts through everything like butter. If you love to cook, and you want a knife that will do the work for you. This is the knife. I was so pleased, I purchased a second knife to add to my set. One word of caution: stick with a reputable seller like Cooking.com as the manufacturer is warning of knock-off cutlery items on some less than reputable sites.

  • If you are asking "should I?"...then yes!

    It's a big step to be willing to pay this much for a knife. But if the price didn't deter you from considering it, this is a FANTASTIC knife.

    First - this is my first global, but the handle is fantastic. Made to be held...wonderful feel, nice and light. One of the most common complaints about these is that they are made for small hands....that is actually true. If you have big hands, maybe this actually isn't for you, but if you're female or have small hands, chances are you will long it!

    Great balance...my first slice was on a head of cabbage and that was all it took to fall in love. I practically gave it no push at all...it just slid down like the cabbage was not meant to be whole.

    *L* the biggest problem I have seems to be not dicing everything. This knife is just such a wonder to use that it's hard NOT to want to use it. I sometimes switch between using it and my Chicago Cutlery (which admittedly I used to think was pretty good...and it is not bad. I keep it sharp. But it is NOT this knife) just so I can remind myself what a wonderful step up.

    Blade will take on anything. Meat, vegetables of all measure soft or hard. Food sees this knife coming and almost seems to politely separate itself :)

    Seems to be holding an edge well...came sharpened (which is not always true of good knives) so I used it for a number of times before sharpening again. Needs sharpening after maybe every 6-8 meals? That's pretty good compared to some of my knives that need it every time. Cleans nice (do I even have to say it's a hand clean only? If you don't realize this...um, please do learn it before you get entrusted with one of these), no discoloration.

    Beautiful, beautiful knife. It was my favorite from the first time I held it in my hand and took that first cut. Rests as a "prize" on the board that holds a couple of Shuns, a MAC, a Henkel, a Victorinox, and a Cutco. Some of the others compare to the cut, but between that and the feel of holding it, this one is the one that I love.

    Strongly considering buying an even larger version of this for the few times when 8" just isn't quite enough. *eyes the butternut squash on the table*

  • I'm going to buy more of these knives!

    This is my first Global knife and it was worth every penny! It is so lightweight and yet perfectly balanced. It is extremely sharp and cleans quite easily. It's one-piece construction makes it very durable. I believe this knife will be a great asset for many years to come. I'm extremely pleased and intend to purchase other sizes of Global knives.

  • Large & In Charge

    Bought this for my wife (and in some respects, me too) in addition to three other global knives. In the past we have used standard economy brand knives around the house. However, since our twins began solid foods, cutting and chopping down to bite size pieces (2-3 times a day) started becoming a chore. Not mention...a bore.

    Simply put - this knife (and the other global knives I purchased along with it) are amazing!!

    Not only are they visually pleasing and beautifully designed, they are an absolute pleasure to work with. Light (but weighted well), sturdy, sharp. effortless are just a few ways to describe the experience. But most of all, they feel great in the hand.

    Bottom line is : The addition of these knives have helped make
