The Wusthof Gourmet 8-in Carving Knife has a long, thin tapered shape, making it a perfect blade for all of slicing and carving tasks. Stamped from high-carbon stainless steel in Solingen, Germany.

Quality Knife - Great Price!

The price grabbed me when I saw a special on this Wusthof knife - What I didn't know was that the "Gourmet" line are stamped then sharpened - most of my Wusthof knives are the Classic" line which are forged, then sharpened. The steel thickness is thinner in the "Gourmet" line, compared to the "Classic" and not near as hefty or substantial. That said, it is sharp, holds an edge and performs well. I am accustomed to a bit more heft and feel more in control with a heavier knife - I just may be more accustomed to that style however. I'll have to see if it resharpens and holds an edge as well as a "Classic!" It is half the price!
