I am a Formally trained Chef of 33 years and have used Wusthof exclusively all of my cooking life. I collect Classic, Ikon and Grand Prix 1 & 2. This latest 8 inch Chef's knife is a Grand Prix II. I mentor a lot of Chef students in culinary school and foodies just trying to be better cooks. I feel the Grand Prix line is best for budding Chefs as it is more of a comfort to handle, has less of a tendency to slip and conforms ergonomically overall to the users hand. Like all the other Wusthofs, it is extremely well balanced. However, new Chefs find the Grand Prix line less intimidating to handle while honing their craft and getting used to knives in general. I agree with this and that is why when instructing, I always start new students (even my own kids) on the Grand Prix series.
This is a phenomenal product and I can assure you that you will be very happy with this and any of Wusthofs products.
