Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. The result is a knife that is 30% sharper and the ICP (Initial Cutting Performance) lasts twice as long.

Its a knife
I know Wusthof is one of the best, but we bought this knife as a gift to replace a friends missing 40 dollar Calphalon chefs knife. I don't see the real difference between the two... And although its a fabulous knife, and it cuts well, I think we would have all been satisfied with the calphalon again. But by no means is it a bad knife. In fact it is a fantastic knife. Just I dont know if its reeeally worth the money. Needless to say, he loves it and agrees it was a lot for a knife. We are glad we got it, but if you're not a chef, and you want a great knife, you don't necessarily need this Wusthof.

This chef's knife completes my set of three and I couldn't be happier. Its feel and blade design are just what I expected from this manufacturer and I have never been disappointed with their products. Expensive? Yes, But I'll probably give the set to my daughter in the far future.
8 of 12 users found this helpful. Was it helpful to you? Yes | No Report Violation »This knife is wonderful. I had always used cheap knives (bought at the grocery store) until I finally splurged on a couple of good knives. It's amazing the difference. With this knife, a serrated utility knife and a small paring knife, I can handle virtually every task. Cooking is fun again!
