Even though it is impossible to get rhubarb and raspberries here in Korea, I use the pastry recipe exclusively.
And, while I don't attempt to make the freeform shapes with the dough, I do use a tortilla bowl maker as my pan. It makes for a great individual pie, especially apple or 'BAE', the Korean pear-apple. I haven't tried any 'filled pies' yet, but I am going to attempt a pumpkin pie for Thanksgiving.
