I am a professional in pastry and confectionary. The recipe was intreguing for me because of the folded in whites, the yeast, the large quantity of apple, and so on so I gave it a shot. I can not stress how much of a FAIL this recipe is overall. First: the taste is bland, and without character, in fact it diminishes the flavour of the apple. Second: in a 10 inch pan you will still have issues with the centre baking correctly before the sides are entirely dried out or burnt.

I wanted to like this, but it wasn't what I was expecting. It came out overly moist with a bit of an eggy taste - almost like an apple frittata. I cooked it for 50 minutes, and a skewer came out clean, but it just never firmed up well. It kind of flopped out of the pan and broke apart easily. I had planned to bring it to share at work but didn't think it was worthy. I will say that it did not look as dark as the cake in the picture. I will try again, cooking it longer, as I really want it to work. :) It had all the promise of being right up my alley - light ingredients, not too sweet, fruit based. Sigh.
