Only flavoring was garlic. I checked other sites and they all added sweet basil, oregano thyme. I added to my recipe and it was delicious. Greek seasoning instead of salt. WOW! Perhaps this was a misprint?

This is not, and I mean NOT the proper way to prepare a ratatouille. You have to start out sauting the vegetables in a certain order to develope their flavors and cook them properly. My grandmother taught me how to prepare it and all you have to do is remember EZ POT. Eggplant, zucchini, peppers, onions and tomatoes. You add the garlic with the onions. Please do not use this recipe. You will not get the true favors that the French so adore and will only think that they love to eat mush!

The Italians call this Peperonata. I use a can of Italian Plum Tomatoes and eliminate the water....gives a richer sauce. A wonderful side dish in French or Italian!
