I think you should have put ALL the mangoes on the bottom. The cake probably would have bee more moist. I haven't tried this recipe yet, but I will and post my results.

Cake is very tangy with great flavor. But I wonder if something was omitted from the ingredients list?? It called for 3 mangos but 1 covered the bottom of the pan. What about the other 2? The batter was very thick resulting in a very dry, course texture. Flavor was wonderful however.
