I like the high temperature start for this recipe--I think I could have let it go a bit longer before reducing the temperature as my overall cooking time was much longer for a smaller roast. The sauce was an absolute home run, and I made a Yorkshire pudding as well. All in all, a very successful Christmas dinner!

A good change from Aus Jus
I prepared this meal and the sauce was a nice fruity but not too sweet change from a standard Aus Jus and Horse Raddish serving.

A better way to cook prime is in a 225 degree oven. A large roast may take 6-7 hours (for medium rare) but with a remote thermometer inserted into the center they will always come out perfect!
