Cafe du Monde sells a mix!
The Cafe Du Monde Beignets mix works great - I've been to NOLA many times and eaten beignets there and always bring home mix and Cafe Du Monde coffee and fix and then close my eyes and pretend I'm sitting at Cafe Du Monde. I've even found the mix at some grocery stores at home.

Jeff the sugar and salt instructions are there Towards the beginning !FOR THE BEIGNETS: Combine milk and yeast in large bowl; let stand until yeast dissolves, about 5 minutes. Whisk in eggs and melted butter. Add flour, sugar and salt and stir to form moist sticky dough.

Haven't made this recipe, but this should not be called Cafe Du Monde style beignet. It is nothing like them. NO SAUCE IS PUT ON CAFE DU MONDE BEIGNETS!!!! It must be powered sugar to be considered Cafe Du Monde!!!

looks good, but BLUEBERRY SAUCE!!! Yuck. I will be skipping that and using powdered sugar, the only appropriate topping for a beignet.

Recipe errors, even when fixed not that good!
Recipe lists sugar and salt for beignets but instructions omit adding both. Even when added after flour, the beignets lacked much taste. Disappointing.

Wonderful Donuts
The maximum is 4 cups otherwise I would give more. This is truly an excellent recipe. The result is amazing, melt in the mouth donuts, out of this world. I had, in the past, tried so many recipes and yes, this is the best recipe ever!
