Makes 4 servings
You could add about a half cup of wine or dry sherry to the poaching liquid or to the microwave dish when cooking the chicken to add flavor and help keep the meat moist.
RECIPE INGREDIENTS
2 cups shredded cooked
chicken
, warmed
1 cup packaged crisp
chow mein
noodles
1/4 cup thinly sliced
green onions
1/4 cup
soy sauce
2 tablespoons toasted
sesame oil
2 tablespoons
rice vinegar
2 tablespoons water
2 teaspoons
sugar
2 teaspoons grated fresh
ginger
root
1 small red or green
jalapeno
pepper, seeded and finely chopped (1 tablespoon)
4 cups mixed fresh salad greens
DIRECTIONS
In a large mixing bowl combine the chicken, chow mein noodles, and green onions.
In a small saucepan stir together soy sauce, sesame oil, vinegar, water, sugar, gingerroot, and jalapeno pepper. Bring to boiling, stirring to dissolve the sugar. Remove from heat and pour over the chicken mixture. Toss to mix. Serve atop mixed salad greens.
