| This is one of the great table sauces of Mexico. The crisp, fresh flavors of the tomatillos, cilantro (fresh coriander), and chiles make a wonderful accomaniment to tacos de carnitas or grilled (barbecued) meat. One of the most simple ways to enjoy it is in a hot tortilla with nothing more than a little queso panela or fresh farmers chese. Canned tomatillos cannot be substituted in this recipe. |
RECIPE INGREDIENTS

DIRECTIONS
Put the tomatillos in a food processor, then add the remaining ingredients. Pulse briefly so that the texture remains coarse.
|
Set aside for 1 hour before serving to let the flavors meld. The sauce can be refrigerated for up to 3 days.
