DIRECTIONS
Pour the olive oil into a small saucepan. Working quickly with a fork or a small whisk, gradually add the hot water (purists insist that it must be sea water, but most people use ordinary water), and the lemon juice.

Add the salt, garlic and oregano. Put the saucepan over another containing hot water; and cook the sauce in this bain marie for 5 minutes. Pour it into a heated sauceboat and serve.
