RECIPE INGREDIENTS
1 lb
tagliatelle
6 1/2 oz
prosciutto
7 tablespoons
butter
2 tablespoons
olive oil
1/3 cup finely shredded
basil
8 leaves
radicchio
, washed and finely shredded
1/3 cup plus 2 tablespoons freshly grated
parmesan cheese
, plus extra shavings, for garnish
DIRECTIONS
Cook the pasta in boiling salted water until al dente. Drain well and return the pasta to the pan with the butter.
Fry the prosciutto in the olive oil until crisp. Drain on paper towels and then crumble.
In a bowl, combine the basil, radicchio, Parmesan, pepper and half of the prosciutto.
Finally, add the pasta to the bowl and toss quickly and thoroughly through the sauce. Distribute among warmed pasta bowls, top with Parmesan shavings and the remaining prosciutto.
