RECIPE INGREDIENTS

all-purpose flour
8
egg white

3/4 cup low-fat
milk
2 tablespoons
vegetable oil
1 Granny Smith
apple
, peeled, cored, and thinly sliced
1 to 2 tablespoons
sugar
1/4 teaspoon
cinnamon
1/8 teaspoon
nutmeg

DIRECTIONS
In a mixing bowl, combine the flour, a pinch of salt, and egg whites. Whisk until well blended, then whisk in the milk. Cover with plastic wrap and allow to sit overnight in the refrigerator.
Preheat the oven to 400 degrees F.
Heat the oil in a 12-inch ovenproof frying pan over medium heat. When the oil is very hot, pour in all the batter. Let the pancake form a bit of a crust and then top with the apple slices, sugar, cinnamon, and nutmeg.
Place the pan in the oven and bake for 15 to 20 minutes, until the pancake is puffed and golden and the apples have softened. Slide the pancake onto a platter, cool for 2 minutes and slice and serve.
