RECIPE INGREDIENTS
For the Beef:
1 pound beef filet, trimmed
2 tablespoons walnut oil
For the Wine and Pear:
1 cup dry red wine
1 tablespoon grainy mustard
1/2 onion, chopped
1 small carrot, peeled and chopped
1 tablespoon
red currant jelly
1 pear, peeled
1 tablespoon brown sugar
1/4 cup crumbled
blue cheese
DIRECTIONS
FOR THE BEEF:
Preheat oven to 350 degrees F.
Tie beef with string to secure the shape. Heat oil in a baking dish, add meat and cook in oven for 20 minutes for rare beef - 25-30 minutes for medium and 35 minutes for well done.
FOR THE WINE AND PEAR:
While the beef is cooking, pour the wine into the saucepan; add the mustard, onion, carrot, and red currant jelly. Bring to a boil, reduce heat; add pear and simmer for about 15 minutes, or until pear is tender.
TO SERVE:
Remove pear from wine, cut in half and place in oven to keep warm. Bring the wine back to a boil and boil rapidly for 3 minutes. Reduce heat, add the brown sugar and stir until dissolved. Remove onion and carrot from sauce.
Slice the beef and arrange on a serving plate with pear halves. Spoon sauce onto the meat and pears, garnish with crumbled cheese.
