Makes 2 cups
This vinegar used to be drunk as a cordial. You can sprinkle it on fruit salad or a fresh berry mixture served with heavy cream.
RECIPE INGREDIENTS
2 cups
raspberries
1 1/2 cups
white wine vinegar
1 1/2 cups
sugar
DIRECTIONS
In a big china or glass bowl, combine raspberries and vinegar. Cover and allow to sit for at least 24 hours. Strain the liquid through a double layer of dampened cheesecloth or muslin. Do not press on the solids or the vinegar will not be clear. Discard solids, reserving any raspberries for decoration.
Place liquid in a large pan and add sugar. Stir to dissolve sugar. Bring to a boil and simmer for 10 minutes. Remove from heat and cool. Decorate with any reserved raspberries and pour into sterilized bottles and seal. Will keep indefinitely.
