Satay Sauce

Yield:  Makes 2 cups
Serve with barbecued beef or chicken skewers, or as a dip with crudities.
RECIPE INGREDIENTS
1 cup finely crushed peanuts
1 1/2 tablespoon olive oil
1 medium onion, finely chopped
2 teaspoons curry paste or powder
2 small red chiles, finely chopped
1 tablespoon soy sauce
1 tablespoon lemon juice
2 cups water
1 garlic clove, finely chopped

DIRECTIONS
Place crushed peanuts in a bowl of a food processor and process until very finely chopped. Heat oil in large heavy-based pan, add onion and garlic and cook for 1 minute. Add curry paste, and cook until aromatic. Add peanuts and cook for 2 minutes, stirring continuously. Add chilis, soy sauce, lemon juice and water. Bring to a boil and simmer uncovered for 15 minutes.
