Beef and barley is a classic Irish combination. Serve this side dish with a grilled filet mignon with Cashel blue cheese.
RECIPE INGREDIENTS
1/4 cup (1/2 stick) butter
1 small onion, finely chopped
1 carrot, peeled, finely chopped
1 celery, finely chopped
1 cup
pearl barley
, rinsed, drained
5 cups chicken broth
1/4 cup double cream
DIRECTIONS
Melt butter in heavy large saucepan over medium heat. Add onion, carrot and celery; saute until soft, about 5 minutes. Stir in barley; cook 1 minute. Add broth. Simmer gently uncovered until liquid has evaporated and barley is just tender, stirring occasionally, about 35 minutes. Remove from heat. Stir in cream. Season to taste with salt and pepper.
